How can we prevent them from using our sources to create another similar Apps and sell it in iTunes store?
Is signing NDA enough?

From a juridical standpoint, yes, a NDA is enough.
From a technical standpoint, no matter what you do it will always be possible for him to steal code, if he have access to it.
Also worth to note, if he takes code belonging to your company, even without signing a NDA, it’s theft.
Generally, don’t hire people without a solid curriculum vitæ, where previous employees can vouch for him/her. If a person haven’t stole code before, your code would have to be quite incredible for them to start stealing, right?
